Come and have breakfast with me….

This is by no means a healthy eating post, I am not qualified for that. I would simply like to invite you into my little space in this world and share my approach to how I like to avoid as many additives as possible.

This week I managed to gather a handful of fresh home grown blackberry’s, which I was excited to enjoy with my breakfast. I decided to go for pancakes, with strawberries, blackberry’s and a drizzle of honey and lemon. My home grown strawberry’s have not done too well, but they are new plants; so I enjoyed some shop bought strawberry’s, washed with bicarbonate of soda, filtered water and apple cider vinager.

This was the delicious result:

I was so lucky today, to get another great harvest of sherbet tomato’s, week on week these lovely plants do not fail to deliver.

So what to do with these bad boys?……

Bruschetta

I always use two parts olive oil to one part balsamic vinegar. I also add salt, pepper and fresh chives from my herb patch (or any herb I fancy). I also added a sneaky little fresh garlic clove. I served it on some of the tastiest bread in Clitheroe, made by Mark’s Artisan Bakery. If you have never tried this amazing bakery on Whalley Road, just before you get into the main town, then you really are missing out.

Here is a little sneaky peak at my evolving herb patch (I do not seem to have a heart emoji, so you will have to use your imagination).

Fresh Herbs

Before I wrap this up, I will share a little hack I have to store butter. I buy lovely fresh butter from Sabden, when I collect the raw milk. Check out the milking parlour Sabden (more hearts needed here). I like it to spread easily, but I don’t like leaving a whole slab of butter out, so I use those little glass pudding jars (well I warned you this is not about healthy eating), and I place a little Pringle lid on it (more confessions).

So that is a little invite into my typical breakfast routines. I find wellbeing much more of a valuable focus than mental health, because a healthy (or fairly healthy) lifestyle balance will make a positive impact on your mental health. Mindful living is what makes me feel like I am living rather than existing.
